SHRIMP SKEWER SALAD

Sweet ol’ summertime means days of grilling and eating fresh greens and sweet dressings. I’ve been grilling all my meats and poultry, and seasoning it with seasoned salt I got from Costco

Salads keep me feeling clean and good throughout the whole day. I love making mean salads with a whole lot of vibrant colors, but you can do what you please with yours. This salad and this vinaigrette by An Edible Mosaic will make you crave for more like it did for me. Hope you enjoy these recipes!

SHRIMP SKEWER SALAD W/ SWEET ONION VINAIGRETTE
Serves 4
A vibrant summer shrimp salad with the most incredible salad dressing you will ever have in your whole entire life.

salad
  1. mixed greens
  2. black eyed peas (not the band, the beans)
  3. shredded parmesan cheese
  4. chopped tomatoes
  5. sliced avocado
  6. silvered almonds
shrimp
  1. 1 tbsp olive oil
  2. minced garlic
  3. 1 lb shrimp, shelled and deveined
  4. seasoned salt
  5. pepper
  6. skewers
  7. sweet onion vinaigrette (see below)
Prep salad
  1. Wash veggies.
  2. Place mixed greens in a large bowl.
  3. Fill veggies with beans, tomatoes, and avocados.
  4. Sprinkle parmesan cheese and almonds. Set aside.
Prep shrimp
  1. Wash and pat dry shrimp before grilling.
  2. In a skillet, heat olive oil and garlic over medium heat.
  3. Grill shrimp until both sides are white and not transparent for about 3-5 minutes.
  4. Season with seasoned salt and pepper.
  5. Stick shrimp onto skewers.
Notes
  1. Tip: Once shrimp turns white, it's done. Try not to overcook them.

sweet onion dressing
  1. 1/3 cup olive oil
  2. 2 garlic cloves, minced
  3. 2 tbsp red wine vinegar
  4. 2 tbsp honey
  5. 11/2 tsp dijon mustard
  6. 11/2 tsp soy sauce
  7. 1 tbsp sesame seeds
  8. 1/4 cup white onion, minced
  9. pinches of salt and pepper
For the dressing
  1. In a medium bowl. mix ingredients all together.
  2. Toss with salad. Oh, god! So yummy!
